Today I will share with you my experience from my attempt to make homemade wine in 2013. How I went from near disaster to making a good wine.<\/p>\n\n\n\n<p>For the previous 3 years, I had been making home wine with no others help.<\/p>\n\n\n\n<p>I was crushing the grapes. I put the grapes puree along with the grapes in a plastic container and left it for a few days stirring it.<\/p>\n\n\n\n<p>Then I used a grape press to get all the must from the grapes.<\/p>\n\n\n\n<p>I put the resulting must into stainless steel containers and left it until the alcoholic fermentation was complete.<\/p>\n\n\n\n<p>I then transferred it back into the stainless steel containers and sealed it.<\/p>\n\n\n\n<p>The whole process took about 40 days.<\/p>\n\n\n\n<p>The home wine I was producing was good and without additives, but lacked what we call a &#8220;body&#8221;. It didn&#8217;t have that something that stays with you. This observation was made to me by my friend Yiannis Kongalidis when he tasted my wine.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">In 2013, I decided to make two drastic changes<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>To separate the must from the grape rinds<\/li>\n\n\n\n<li>To consult an oenologist<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">27 August 2013 &#8211; Crushing the grapes<\/h2>\n\n\n\n<p>I picked the grapes and crushed them. I took only the must. It contains no grape marcs.<\/p>\n\n\n\n<p>I poured Mustol 1 into the must as I was told by the oenology lab.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">2 September 2013 &#8211; Mold develops &#8211; Things go bad<\/h2>\n\n\n\n<p>It has been 6 days and the must has not started to &#8220;boil&#8221;. The alcoholic fermentation hasn&#8217;t started.<\/p>\n\n\n\n<p>In previous years, when I put the grape rinds together with the must and I did not add Mustol 1, the must started boiling immediately. But this year nothing was happening.<\/p>\n\n\n\n<p>Do you think that&#8217;s all the bad news? A year of work and a lot of expectations are wasted. Or not&#8230;<\/p>\n\n\n\n<p>I turn to the internet to find out why fermentation hasn&#8217;t started and why the mold has developed.<\/p>\n\n\n\n<p>I find that it is because there are not enough yeasts because I have not put in the grape rinds and that I may have put in a higher dose of Mustol 1 which contains sodium metabisulfite. Sodium metabisulfite can kill the yeasts.<\/p>\n\n\n\n<p>Without yeast, the fermentation can&#8217;t start.<\/p>\n\n\n\n<p>I immediately begin aerating the must while helping it come into contact with copper which helps neutralize the sodium metabisulfite.<\/p>\n\n\n\n<p>What does aeration of the must means in my case?<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" width=\"450\" height=\"338\" src=\"https:\/\/www.kalliergo.gr\/en\/wp-content\/uploads\/2014\/01\/2014-01-19-ftiaxno-krasi-img05.jpg\" alt=\"I take must out of the stainless steel container and pour it with a splash into basins\" class=\"wp-image-1493\" srcset=\"https:\/\/www.kalliergo.gr\/en\/wp-content\/uploads\/2014\/01\/2014-01-19-ftiaxno-krasi-img05.jpg 450w, https:\/\/www.kalliergo.gr\/en\/wp-content\/uploads\/2014\/01\/2014-01-19-ftiaxno-krasi-img05-300x225.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/figure>\n\n\n\n<p>I take must out of the stainless steel container and pour it with a splash into basins. Splashing helps more oxygen to come in contact with must.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" width=\"450\" height=\"338\" src=\"https:\/\/www.kalliergo.gr\/en\/wp-content\/uploads\/2014\/01\/2014-01-19-ftiaxno-krasi-img06.jpg\" alt=\"In the basins I have placed two copper water pipes\" class=\"wp-image-1494\" srcset=\"https:\/\/www.kalliergo.gr\/en\/wp-content\/uploads\/2014\/01\/2014-01-19-ftiaxno-krasi-img06.jpg 450w, https:\/\/www.kalliergo.gr\/en\/wp-content\/uploads\/2014\/01\/2014-01-19-ftiaxno-krasi-img06-300x225.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/figure>\n\n\n\n<p>In the basins I have placed two copper water pipes that I have scraped well to give them a shiny copper color.<\/p>\n\n\n\n<p>I repeat the process several times to bring the must into contact with the oxygen and copper.<\/p>\n\n\n\n<p>After this process the mold is gone and the stale egg smell in the must disappears. But the must has not yet started to boil.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">3 September 2013 &#8211; Back to oenology lab<\/h2>\n\n\n\n<p>Back to the oenology lab. I tell them the symptoms about the mold, the smell of the rotten egg and that the must has not started to boil. The alcoholic fermentation hasn&#8217;t started yet.<\/p>\n\n\n\n<p>They tell me that I poured more than I needed of Mustol 1.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" width=\"450\" height=\"338\" src=\"https:\/\/www.kalliergo.gr\/en\/wp-content\/uploads\/2014\/01\/2014-01-19-ftiaxno-krasi-img07.jpg\" alt=\"yeast to start the alcoholic fermentation\" class=\"wp-image-1495\" srcset=\"https:\/\/www.kalliergo.gr\/en\/wp-content\/uploads\/2014\/01\/2014-01-19-ftiaxno-krasi-img07.jpg 450w, https:\/\/www.kalliergo.gr\/en\/wp-content\/uploads\/2014\/01\/2014-01-19-ftiaxno-krasi-img07-300x225.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/figure>\n\n\n\n<p>They give me yeast to start the fermentation.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" width=\"450\" height=\"338\" src=\"https:\/\/www.kalliergo.gr\/en\/wp-content\/uploads\/2014\/01\/2014-01-19-ftiaxno-krasi-img08.jpg\" alt=\"\u0391\u03ba\u03bf\u03bb\u03bf\u03c5\u03b8\u03ce \u03c4\u03b7 \u03b4\u03b9\u03b1\u03b4\u03b9\u03ba\u03b1\u03c3\u03af\u03b1 \u03c0\u03bf\u03c5 \u03bc\u03bf\u03c5 \u03b5\u03af\u03c0\u03b1\u03bd \u03ba\u03b1\u03b9 \u03b5\u03bd\u03b5\u03c1\u03b3\u03bf\u03c0\u03bf\u03b9\u03ce \u03c4\u03b7 \u03bc\u03b1\u03b3\u03b9\u03ac\" class=\"wp-image-1496\" srcset=\"https:\/\/www.kalliergo.gr\/en\/wp-content\/uploads\/2014\/01\/2014-01-19-ftiaxno-krasi-img08.jpg 450w, https:\/\/www.kalliergo.gr\/en\/wp-content\/uploads\/2014\/01\/2014-01-19-ftiaxno-krasi-img08-300x225.jpg 300w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/figure>\n\n\n\n<p>I follow the procedure I was told, to activate the yeast.<\/p>\n\n\n\n<p>I pour the yeast into the must.<\/p>\n\n\n\n<p>Several hours of agony pass, but in the evening, the must finally starts to boil!<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">13 September 2013 &#8211; Alcoholic fermentation is complete<\/h2>\n\n\n\n<p>The alcoholic fermentation is complete.<\/p>\n\n\n\n<p>I take samples to the oenology lab. They tell me that everything is very good and the wine is good.<\/p>\n\n\n\n<p>They give me to pour in <a href=\"https:\/\/oinofili.gr\/oinoli-tablets\/\" target=\"_blank\" rel=\"noopener\">Oinoli<\/a> (another oenological substance).<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">14 September 2013 &#8211; I add Oinoli to the &#8220;wine&#8221;<\/h2>\n\n\n\n<p>I poured the <a href=\"https:\/\/oinofili.gr\/oinoli-tablets\/\" target=\"_blank\" rel=\"noopener\">Oinoli<\/a> into the wine as I was told by the oenology lab.<\/p>\n\n\n\n<p>I put oak additives inside a tulle.<\/p>\n\n\n\n<p>The oak additives help a wine in a stainless steel container, get the flavor and body that it would have if it were in a wooden oak barrel.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">12 November 2013 &#8211; Removal of oak additives<\/h2>\n\n\n\n<p>I removed the oak additives from the wine.
